Homemade Tortillas and Chicken Tacos

 
 
Grilled Chipotle Lime Chicken Tacos with Avocado Lime Sauce
 
 
In our home tortillas are a staple for meals like fajitas, tacos, breakfast wrap, lunch warp and so on. Since moving from South Carolina to Virginia we could no longer get the organic tortillas we liked unless we drove two hours to get them. After depleting what we had in the freezer I decided to look for a recipe and try to make my own. I found  a recipe for Spelt Flour Tortillas, they are easy to make and have a wonderful flavor. I am thinking there is no longer a need to buy tortillas again.
 
Grilled Chipotle Lime Chicken
 
4 boneless skinless chicken breasts
1 lime, zest and juice
1/4 cup olive oil
1/2 tsp ground chipotle
1/2 tsp fine sea salt
 
Put chicken in a glass dish.
Mix together zest and juice from one lime, olive oil, ground chipotle and sea salt and pour over chicken making sure to coat every piece.
Allow to marinate for a couple hours or over night.
Remove from marinate and grill, discard leftover marinade.
Allow to rest then slice thin.
 
Avocado Lime Sauce
 
1 avocado
1 lime, zest and juice
1/2  cup sour cream
1/2 tbl olive oil
milk to thin
garlic
salt
ground pepper
 
Cut, peel and seed avocado, smash with fork and set aside.
Zest and juice lime and add to avocado.
Whisk in sour cream, olive garlic, salt and pepper to taste.
To thin add milk.
Refrigerate until ready to use.
 
To assemble tacos:
 
Put chicken slices onto spelt flour tortillas or any other tortilla of your choice.
Top with good sharp cheddar cheese, we use New Zealand Grass Fed Sharp Cheddar that I find at Trader Joe's.
Drizzle with Avocado Lime Sauce and a hot sauce of your choice, we use Organic Harvest Chipotle Habanero Pepper Sauce.
Garnish with Cilantro and Enjoy!!
