Orange Loaf Cake

Ingredients
1 1/2 tsp. baking powder
1/2 tsp. salt
1 1/4 cups sugar
2 cups cake flour
1/2 cup shortening
1/2 cup liquid (use juice and grated rind from one orange and water to make 1/2 cup)
2 large eggs
Directions
Sift dry ingredients.
Mix all liquid and dry ingredients together in mixer for 2 min.
Add unbeaten eggs and beat 2 minutes longer
Pour in 4x8" bread pan which has been greased and lined with paper.
Place pan on cookie sheet in 350 degree oven for 60 to 65 minutes.

My changes
1 3/4 cups of organic all purpose flour instead of cake flour
1/2 cup organic melted butter instead of shortening
I whisked the melted butter in with the "liquid" then whisked in each egg before adding dry ingredients.
Greased and floured bread pan instead of lining it with paper.
Flipped it onto a cooling rack right out of the oven.
Glazed it with a mixture of grated orange rind and juice from one organic orange and organic powder sugar.
