Take Two: Crock Pot Chicken Piccata


I posted my Crock Pot Chicken Piccata recipe in 2010, today I thought we would revisit it and make a couple changes . Below you will find my original recipe and a list of changes that were made.  Enjoy!!
 
Crock Pot Chicken Piccata
 
Ingredients
4 skinless boneless chicken breast
olive oil
flour
ground pepper
garlic powder
zest of one lemon
2 tbs. butter
1/4 c. lemon juice
1/2 c. white wine
1/2 c. chicken stock
2 cloves chopped garlic
1/4 heaping c. capers
1 c. fresh mushrooms (or artichoke hearts, I had mushrooms that needed to be used)
1/2 c. fresh diced cherry tomatoes (or canned diced tomatoes, fresh is what I had)

Directions
1. Combine flour, ground pepper, garlic powder and zest of one lemon in shallow dish.
2. Pound out chicken about 1/4 inch thick dredge in flour mixture and brown both sides of chicken in olive oil.
3. Add chicken to crock pot, adding the remaining ingredients on top of it.

Cook on high 4-6 hours or low at 6-8 hours, or until chicken is tender depends on your crock pot.
Serve over your choice of pasta, rice or just by it's self with a salad.
 
The Changes:
1. No mushrooms ( I did not have any and hubby is not fond of them at all....but they give it a great taste)
2. Instead of diced cherry tomatoes I used 14.5 can of Muir Glen fire roasted diced tomatoes.
3. Instead of 1/4 cup of Capers I used the whole 3.5 jar of Capers, liquid drained.....can you ever have to many, really!!?
4. I added Lemon Slices, they can be taken out prior to serving.
5. Salt and Pepper to taste prior to serving.
 
For my GLUTEN FREE friends, I am sure you could use another type of flour like coconut, oat or whatever you would like.  Same with the pasta, there are great Gluten Free pastas out there.
 
UPDATE: I was told in a not so nice way that there are no tomatoes in Chicken Piccata, I want to make it clear that this recipe was my take on a Chicken Piccata product that we use to buy on regular basis that did have tomatoes in it.
